Braised vegetables
- Take a selection of vegetables but including onions, garlic, baby
marrows and green peppers - cook slowly in a small amount of white wine
- add a tin of chopped Italian tomatoes - cook until the sauce is thick.
- Serve with garlic bread
African Fish Pie
2 pounds fish - bass, lemon fillet, hake, kingklip - or an selection
- cooked and shelled prawns, mussels may be added as well
white wine - dry - for cooking
1 TBS butter
2 onions
4 cloves garlic
1 green pepper - diced
1 pt Thick white sauce
1/2 pound sharp cheese
- Cook onions, garlic and green pepper in butter until soft
- Add fish and white wine - cook slowly until just done
- Add white sauce and season to taste
- Place in a large round dish and place cheese slices on top
- Bake in a hot oven until bubbling and the cheese has browned
- Serve with sliced mushroom salad and green salad
Chocolate and Macadamia Nut Gateau
1 slab dark chocolate
1 packet digestive biscuits
1 egg
1 cup white sugar (caster)
1/2 pound butter - melted
200 gr. macadamia nuts
1 tot whiskey
- Melt chocolate and butter slowly and mix well
- Crush digestive biscuits and mix with the sugar, add the egg mixed
with the brandy
- Add the finely chopped macadamia nuts
- Place in a springform pan and chill - unmold and decorate with cream
rosettes and silver balls.
