EGGS AND SMALL HOLLOW CHOCOLATES

Treat your moulds like the liqueur bottles in the last lesson

Always easy your moulds together to make an exact join

Bang to get rid of air bubbles that could weaken your finished product.

If your mould has a pattern on the inside make sure that the design is the same way round on each half when you join them together.

Keep turning your joined moulds until you can hear and feel that the chocolate is set

Moulds may be decorated with coloured chocolate or icing

Small eggs or other hollow shapes may be filled with creme filling - set each side of the mould separately as if making moulded filled chocolates - fill with chosen filling and then join when the filling is set.

Paint along the join with a fine brush dipped in liquid chocolate to seal and decorate as required
